Mix Veg Sabji

Method

  1. 1

    Wash and cut all the vegetables into similar, bite-sized pieces so that they cook evenly. Keep the potato cubes in water until needed.

    Heat the oil in a kadai on medium heat. If using mustard oil, heat it until it just begins to smoke, then lower the heat.

  3. 3

    Add Swastik Cumin Seeds and let them crackle for 10–15 seconds. Add the onion and green chilli and sauté for 4–5 minutes until golden.

    Add the grated ginger and cook for 30 seconds. Add the tomatoes with a pinch of salt and cook for 4–5 minutes until soft.

    Lower the heat and add Swastik Turmeric Powder, Swastik Red Chilli Powder, Swastik Coriander Powder and 2 tsp Swastik Sabji Masala. Add 2 tbsp water so the spices don't burn, and cook the masala for 2–3 minutes until oil separates.

    Add the potatoes and carrots first (they take longest) and toss well to coat them in the masala. Cover and cook for 5 minutes.

    Add the cauliflower, beans and peas with salt to taste. Mix well, sprinkle 3–4 tbsp water, cover and cook on low heat for 10–12 minutes, stirring every few minutes, until all the vegetables are tender but still hold their shape.

    Uncover, raise the heat for a minute to dry out any extra moisture, then sprinkle Swastik Garam Masala and mix gently.

    Garnish with chopped coriander and serve hot with roti, paratha or dal-rice.
